This cake is awesome. There is a secret behind its soft, moist wonder. However, I am a little bit embarrassed to admit it! You have to understand that I am a gal who never fed her kids store bought baby food and used washable diapers. I love to cook and usually the more difficult the recipe – the happier I am.
Having said that – here is the secret behind this cake. You make it using a box cake kit. I do spruce it up a little bit with an extra egg but really A BOX CAKE MIX???? That is why I sent my dad to the store to buy the ingredients because while I was craving a slice I could not bring myself to actually buy what was needed. I have not linked to any internet cake recipes because it actually comes from a handwritten recipe in my Mom’s collection of vintage 80’s recipes. If using a boxed cake mix freaks you out, you can always try this classic from the Smitten Kitchen. Otherwise, this easy peasy lemon cake is a guaranteed crown pleaser!
Here is what you will need:
CAKE
Dunkin Hines Lemon Supreme Cake mix
Lemon pudding mix
4 eggs
1 cup (240 ml) of water
1/3 cup (80 ml) of vegetable oil
LEMON GLAZE
zest from 1 and a half lemons
juice from 1 and a half lemons
1 and 3/4 cup (220 grams) of powdered sugar
Put all cake ingredients in bowl and mix. Pour into a buttered and floured cake pan. Cook at 350°F (180°C) for 50 minutes or a tester comes out clean.
Let cool for 25 minutes.
Turn out of pan and let cool until room temperature.
Now it is time to make the icing. Here is a hint to remember to make this process easier – add the lemon juice slowly to the powdered sugar. The icing needs to be thick or it will just run down the sides of the cake and pool in plate.
The kids were ignoring me until the yummy lemony aromas reached them. Then they decided to camp in the kitchen. I told them they had to wait to have a slice until the frosting had completely hardened but when I came back into the kitchen the cake had been attacked!
